Learning from the Past

I just realized that Sophie is wearing nothing but a diaper in almost every picture. That's probably because she is a very hot blooded child and so we keep her in just a diaper most of the time unless we go out. I did the same with M and S, and I had a hard time getting Savannah to keep clothes on until she was about 5-6yo! I think I will learn from that with Sophie and at least by the time she is crawling or walking make sure she keeps a little dress on. :)

Authentic Homemade Chile (Salsa)

Marrying into a Mexican family has meant learning a lot of new things over the years, mainly in the eating category. Chile (pronounced more like chee-le, short e) or salsa, as we white people call it ;) , is a staple in the Mexican diet. David likes to refer to it as his "Mexican butter". There are probably lots of ways to make real chile but this is our favorite way and it is very easy. Some recipes call for peeling and seeding the tomatoes but that is just crazy in my opinion. This is the way his mother makes it and his Welita (grandmother).



Here is the equipment you will need:

  • A sauce pan or pot big enough to fit the tomatoes and jalapeno in and cover them with water.
  • Blender or food processor.
  • Knife or even better is a Cuisinart Food Chopper, the one I have is a Farberware but it looks just like this one. I love this thing, it makes chopping onion and garlic so much easier. A food processor usually makes things like onions and bell peppers too watery.
  • A jar to store the chile in.



Authentic Homemade Chile

  • 3 Roma Tomatoes (you could probably use any tomato)
  • 1 Jalapeno (or 2 if you like it REALLY hot)
  • 3 medium or 2 large cloves of Garlic
  • about 5-6 stems of Cilantro
  • salt to taste

Wash the tomatoes and jalapenos off and place them in the pan, cover with water. Bring to a boil and then lower heat slightly (just so the water isn't boiling over) . Let cook until the skins start peeling off. (ETA: you do not need peel the skin off just wait for the skins to start cracking, it may not crack on the jalapeno, leave it in the water longer if you want more watery salsa or follow the directions as is if you prefer it a little thicker) You may have to take the tomatoes out before the jalapenos. While they are cooking chop up your garlic and wash off your cilantro stems, use the whole stems.

Put all ingredients into the blender and blend until it is the consistency you want. (ETA: you want to cut off the jalapeno stem first) Salt to taste and pulse it a little more to mix the salt in. Use immediately or put it in your jar. I used an old 13 oz. salad dressing bottle. Refrigerate any left overs for up to 3 weeks or so. It tastes best eaten warm but is good cold also.

Use as a dip for corn chips, or put in tacos, or over eggs, or with just about anything. I hope you enjoy it!

Sweet Little Angel

This is a common sight around here. Sophie is rarely put down, there is always someone who wants to hold her. :)


See how her hair spikes up? She has this cute little cowlick on the back of her head. If her hair is dry I can NOT get it to go down in the back.
